Blog Guelph: Fall Layers

Good Morning!
Fall is certainly all around us today. Most of the leaves are off the trees in my neighbourhood, except I see my one neighbour who's tree will certainly dump on my yard after I rake. I'm holding off until then.
It was nice walking yesterday, and I hope we get a few more days where wearing a light jacket is too much.

Guelph Festival of Moving Media, is coming up November 5-7, and you can check here if you are interested in volunteering. Did you know that Guelph began one of the world's first documentary film festivals? It all started in 1984!
There is also a sneak peak of program details, with the full program coming soon.

Blog Guelph: Necessary

I meant to do a Made in Guelph this morning. I forgot until now. I posted these photos and then I twigged.

I have wanted to share this recipe on Blog Guelph for some time. I've also been wanting to have this recipe for a long time before that. Almost a year ago I tried it at a friend's house and since then I have been saying how great it was. One day last month the recipe landed in my in box, and well the rest is history. I think the original comes from one of those LCBO magazines, but I'm pretty sure she has tweaked it even from the recipe I am putting up. For some reason I don't remember eggplant in her dish that winter's night. I make it with the eggplant and it's delicious, but I might try it without next time.
So without further ado here it is. Enjoy!

Vegetable Gratin


Here is the recipe for the vegetable gratin. It looks like a lot of work, but is actually very simple and delicious. Crush your garlic into your oil, toss the sliced zucchini and eggplant with course salt and put in a colander to drain (10 minutes). Squeeze out any remaining liquid. Cut your bread and tomatoes. Sprinkle some of the garlic oil on the bottom of your pan. Lay your bread on that. Drizzle some more garlic oil on the bread and sprinkle with salt, pepper and some basil leaves. Toss the drained zucchini and eggplant with some garlic oil and arrange the zucchini, eggplant and tomatoes over the bread. Sprinkle thyme leaves and salt and pepper. Drizzle the remaining garlic oil over the finished project and bake at 400 until the bottom of the bread is browned and toasted.

1/2 medium eggplant, sliced crosswise 1/4 inch thick
1 medium zucchini, sliced 1/4 inch thick
6 tablespoons olive oil with 4 garlic cloves crushed in it
one loaf rustic white bread, crusts removed and bread sliced 1/2 inch thick
freshly ground pepper
1/2 cup torn basil leaves
3 medium tomatoes, sliced 1/2 thick
1 teaspoon thyme leaves.

1. Preheat the oven to 400 degrees. In a colander, toss the eggplant and zucchini with 1 teaspoon salt and let stand for 20 minutes. Drain well and gently squeeze out any excess liquid.

2. Meanwhile, in a small bowl, stir the olive oil with the garlic. Coat a 9-by-13 inch baking dish with 11/2 tsps of the garlic-infused oil. Tear the bread into 2 inch pieces and line the bottom of the baking dish with bread, fitting the pieces tightly together. Drizzle the bread with 2 tbs of the garlic oil and season with salt and pepper. Sprinkle the bread with half of the basil.

3. In a medium bowl, toss the eggplant and zucchini with 2 tbs of the garlic oil and season with salt and pepper. Sprinkle the tomato slices with salt and pepper. Arrange the eggplant, zucchini and tomatoes over the bread, overlapping them if necessary. Sprinkle with the thyme leaves, salt and pepper and drizzle with the remaining garlic oil.

4. Bake the gratin for about 40 minutes until the vegetable begin to brown and the bottom of the bread is golden brown. Remove the vegetable gratin from the oven and let stand until cooled slightly, about 10 minutes. Sprinkle with the remaining basil, cut into pieces and serve.

Make ahead: The gratin can be baked up to 2 hours in advance. Reheat in a 350 degree oven or serve at room temperature.

Blog Guelph: Brownie Hawkeye flash -The older witch


Today's photo selection features Cool Baby and his Kodak Brownie Hawkeye Flash Camera! Allow his photography to take you to another dimension. Please - sit a spell. Look closely. He knows how to inspire wondering in all who wait.

I have a few 'course type events' to run by you on this, our first, Frosty Friday. I love taking courses, have taken a zillion thus far and have run a few hundred myself. Such fun and expansion of self can be had at the right course.

So then: Russell Mater, Guelph's primer cranial sacral therapist is hosting his wonderful introduction to biodynamic craniosacral theory and techniques, in Guelph on November 17-20. I've taken the level one so you get my take. If you're seeking a peaceful, extraordinary learning experience, call Russell.

Coming to Guelph on October 27th we have Mr. Tad Hargrave from Edmonton who is here to host Marketing for Hippies: Marketing 101 for Holistic Practitioners. Space is limited to 20 and it's pay what you can.

I've signed up, so make that 19.

Last but not least, Conestoga College has a slew of great courses waiting for the taking - some that will lead to good work if that's your need and focus. For you photo buffs out there, Continuing Education Photography Courses are plentiful, inspired and very helpful.

Our cup runneth over with choice. Do Be Do Be grateful.

Blog Guelph: All In A Row

Mushrooms!

There has been an explosion of mushroom photographs on the Guelph streams, which likely speaks to an abundance of mushrooms within Guelph. I never really gave mushrooms much attention, but in these images you can sure feel the enchanted world that they seem to inspire. The very talented photographers of Guelph have done an amazing job creating dynamic visualize stories with these 'shrooms. These pictures make me wonder all manner of things that don't make sense, what mystery exists in these small worlds, and what players dance around the stems?

Blog Guelph: Guelph Lake

Black and White Wednesday goes to Guelph Lake

Guelph Lake is an epicenter for activity in Guelph. It is home to Hillside, the Guelph Rowing Club, the Guelph Lake Triathlons, numerous running races, all year fishing, winter pond hockey, mountain bikers, dog walkers, family picnickers, and photographers. It is a really interesting place to walk around, in any season. There are some fantastic arrangements of trees now partially submerged on account of the dam, and the shore cuts some really dynamic curves. The trails leading to and around the lake meander through some crazy forests, which will be featured in coming weeks. If you haven't yet been to Guelph Lake, take a few hours to explore the area, and don't forget your camera because the photo ops are incredible!
